Halloumi & Pesto Traybake
Recipe for 3 servings
A seriously tasty, nutrition packed and simple recipe to add to your cooking repetoire!
Ingredients:
2 large sweet potatoes
2 small red onion (into chunks)
90g pesto
2 garlic cloves (crushed)
½ teaspoon salt
2 tablespoons olive oil
1 red pepper (cut into chunks)
1 orange pepper (cut into chunks)
280g cherry tomatoes
350g halloumi cheese (cubed)
1 tablespoon pine nuts
Fresh basil to garnish
Method:
Preheat oven to 180c. In a small bowl combine the pesto, garlic, salt and olive oil.
Scatter the sweet potato and red onion chunks onto a large baking tray and cover in ½ of the pesto mixture.
Roast in the oven for 15 minutes.
Next add the pepper chunks, cherry tomatoes, and cubed halloumi. Add the rest of the pesto mixture and combine well.
Place back in the oven for 20 minutes.
Serve with pine nuts and some fresh basil.
