No-bake Tahini Bars
Looking for a quick and delicious nibble or ride snack? These no-bake tahini bars are packed with nutrients including fibre, protein and healthy fats (for skin and gut health!).
Tahini is sesame seed paste and it's a key ingredient in hummus (shop bought and home made!). So if you have some in your cupboards, or spot it in the shops (my local Tesco Express even sells it!) give this recipe a go (or just use more of the nut butter!).
Ingredients
2 tbsp (30g) Tahini (or extra nut butter)
1/2 cup (110g) Almond Butter
1/4 cup (70g) Honey
2/3 cup (70g) Quick Cook Oats
3 tbsp (or scant 1/4 cup - 30g) Desiccated Coconut
1/4 cup (50g) Chia Seeds or Flaxseeds
1/3 cup (60g) Dried Apricots or Unsweetened Cranberries or Raisins
Method
1. Line a small baking dish with parchment paper.
2. Mix the tahini, almond butter, and honey in a bowl.
3. Add oats, coconut flakes, seeds, and dried fruit. Mix well.
4. Press the mixture into the baking dish to create an even surface.
5. Chill for 30 minutes, then cut into bars (store in the fridge)
